A classic Puerto Rican chicken stew made with Sazon, sofrito, and a delicious mix of veggies. Comfort food at its best!
🛒 Ingredients

6–8 chicken drumsticks (or meat of choice)

2 tsp adobo seasoning

1 packet sazón

3 cloves garlic (minced)

1 tbsp sofrito
-
½ cup olives
-
2 bay leaves
-
8 oz tomato sauce
-
1 bell pepper (any color, diced)
-
1 small onion (chopped)
-
1 large potato (about 1 cup, diced)
-
1 cup carrots (chopped)
-
½ cup green beans
-
½ cup corn
-
2 tbsp oil
- 3 cups of chicken broth
👩🏽🍳 Instructions

Prep the veggies – Chop all vegetables ahead of time for easier cooking.

Season chicken – Rub drumsticks with adobo and sazón. (Remove skin if preferred or lift skin to season underneath.)

Brown the chicken – Heat oil in a large pot over medium-high heat. Sear chicken 5 minutes on each side until golden. Remove and set aside.

Cook aromatics – In the same pot, sauté onions and garlic until golden (about 2 minutes). Add bell pepper and cook 1 more minute.

Build the stew – Stir in tomato sauce, sofrito, carrots, corn, green beans, olives, potatoes, and bay leaves. Add chicken broth to cover. Bring to a boil.

Simmer – Return chicken to the pot, cover with a lid, reduce heat to low, and cook for 45 minutes until chicken is tender and flavors blend.

Serve & enjoy – Best paired with white rice and beans for a classic Puerto Rican meal.
